Warm & Cozy Winter Recipes {Day 9}

Don't you love recipes that are easy and inexpensive, but pack a punch!
You are going to love this super easy, super cheap, and absolutely beautiful Coconut Pie!

Easy Coconut Pie
(from my mom, origin unknown)

ingredients:
2 c. milk
1/4 c. margarine, softened
4 eggs
3/4 c. sugar
1/2 c. Buisquick Original baking mix
1-1/2 tsp. vanilla
1 c. flaked or shredded coconut

instructions:
1. Heat oven to 350F. Grease glass pie plate, 9 or 10 inch.
2. Stir all ingredients with fork until blended. Pour into pie plate.
3. Bake 50 to 55 minutes or until golden brown and knife inserted in center comes out clean. Refrigerate any remaining pie.

Makes own crust. Top with whip cream.


Wow, right? Super easy to put together, and boy, is it delicious! I love this pie, as does my husband, my oldest son, my father-in-law, and so on!! It does not get any better than this!
