Warm & Cozy Winter Recipes {Day 2}

I think I should mention here that NONE of the recipes posted on this blog can be considered 'diet' food! LOL!
Here we go:



Sweet Cornbread Muffins
(swiped from the wrapper of a 10lb. bag of sugar years ago)
~
ingredients:
1-1/2 c. flour
2/3 c. sugar
1/2 c. corn meal
1 Tbsp. baking podwer
1/2 tsp. salt
1-1/4 c. milk
2 eggs, beaten
1/3 c. oil
3 Tbsp. butter, melted

instructions:
350F; Grease or paper line 18 muffin cups. Mix all dry ingredients; mix all wet ingredients, then combine until moistened. Fill cups 2/3 full, bake 18 to 20 minutes

For Cornbread:
Pour batter into a greased 8 inch square or round pan. Bake 35 minutes, or until a toothpick comes out clean.


This is my MOST FAVORITE cornbread recipe in the world! I will never use another! It is cake-like and sweet. It melts in your mouth, it's so good! My entire family loves it! Whenever I make homemade soup, stew, or casseroles, I serve this cornbread with butter and honey. And, whenever we are having company over for dinner, my husband asks me if I am making cornbread!

You've got the recipe now, go try it! I promise, you will throw away all of your old ones!
